Good Eats

Matt and I have been trying to eat healthier this year and we have had some great new additions to our menu. I love using new recipes and I love when they are healthy too.

Avocado Chicken Salad served on a pita: recipe
-We left out the onions and just mixed everything in one bowl

Broccoli and Chicken Alfredo: recipe
- We used fettuccine noodles, but you can use whatever noodle you like or have.

This is my Pinterest board with all the food we have made before and liked. They aren't all healthy, but they are tried and true.

University of Massachusetts

Matt got accepted to the University of Massachusetts in Amherst,Massachusetts. We will be moving there probably late June early July and we are driving the 36+ hour drive. We are excited for the adventure of living on the east coast. Some places we can't wait to explore:
1. Salem Witch Museum
2. Boston
3. Plymouth Rock

I'm excited that we are so close to so many fun places! 4 hours to Philly, 3 hours to New York, 6 and a half to D.C. and about 8 hours to Matt's family.

His program is between 4 and 5 years. He is getting his Ph d in accountancy. He is almost done with his Masters from BYU. He loves research and hopes to teach at a university where he will be able to do  mainly research, but also teach classes. His research focus is experimental accounting. This kinda means  he is interested in doing experiments where he finds out more about how auditors think and what motivates them in the workplace. Ask Matt if you want to learn more about it,but that's what I understand about it.

Goal 4- Weight:
I'm really proud of the success I have had in this goal. So far I have lost 16.5 pounds!  I go running Mondays and Wednesdays at the indoor track on campus. On Tuesdays and Thursdays I do a Zumba class through BYU. I track everything I eat through a free app called lose it. Right now I have hit a plateau,so I'm trying to figure out how I can get through it. Wish me luck on this LONG process.
